Vintage 2025
Hibernal 2025, in its semi-sweet style, is a fresh and distinctly aromatic wine that captivates with its rich fruitiness and pleasantly low alcohol content – just 10.0% vol. This makes it light, extremely easy to drink and ideal for summer gatherings.
The bouquet blends notes of citrus, gooseberry, peach and exotic fruit, complemented by delicate floral nuances. On the palate, the wine is juicy and harmonious, with residual sugar of 31.5 g/l beautifully complementing the crisp acidity of 6.8 g/l. The result is an elegant, fresh wine with a long, fruity finish.
Hibernal is an excellent choice for lovers of aromatic, light and fruity wines. It’s perfect for summer get-togethers, pairs well with fruit-based desserts and mild cheeses, and makes for a delightful wine to enjoy during moments of relaxation. 🍇🍷

„We harvested the Hibernal grapes on 14 October, when the sugar content was 21.6 °NM. They were beautifully healthy, and even during fermentation it became apparent that this year’s Hibernal would be a little different.
We carried out fermentation at a lower temperature of around 16.5 °C to preserve as much of its distinctive fruity aroma as possible. At just the right moment, we halted fermentation by chilling the wine, leaving 31.5 g/l of natural residual sugar in the wine. This is beautifully balanced by the fresh acidity and, together with an alcohol content of just 10 per cent, makes the wine light, juicy and wonderfully drinkable.
What we particularly enjoy about the 2025 vintage is its aroma. Instead of the distinctly herbal and elderflower notes that Hibernal can sometimes have, this time it has opened up mainly to tropical fruit, mango, pineapple, ripe peach and fresh grapefruit.
The result is a distinctly aromatic yet light and fresh Hibernal, which is best enjoyed well chilled – perhaps simply whilst relaxing on a summer’s day.“
