A lighter and fresher take on Pálava, characterised by its juiciness, delicacy and excellent drinkability. Compared to the more distinctive variant in the ‘Selection of Grapes’ range, this Pálava gives a livelier and ‘lighter’ impression, making it ideal for everyday enjoyment and summer evenings.

The nose reveals delicate notes of flowers, citrus and ripe grapes. The palate is harmonious, fresh and pleasantly fruity, with residual sugar of 26.1 g/l and a more pronounced acidity of 6.8 g/l, which lends the wine energy and lightness. The lower alcohol content of 11% emphasises the wine’s modern, elegant style.

A Pálava that retains its typical aromatics, yet comes across as light, fresh and incredibly easy to drink. 🍇✨

What it pairs with

It goes down a treat with mildly spicy Asian cuisine, such as Thai curry or chicken satay, as well as with sushi, grilled chicken or a delicate pâté. It also pairs well with Brie or Camembert and lighter, fruity desserts. It’s also excellent on its own, well chilled, perhaps on a summer’s evening.

We harvested the Pálava grapes on 22 October, when their sugar content was 22.2 °NM. They were wonderfully healthy and beautifully ripe, with distinctive varietal aromas. After processing, we left them to macerate on the skins for eight hours to extract the maximum aroma and fruity character.

Fermentation took place at around 18 °C. This time, we did not want to produce an overly full-bodied and heavy Pálava – the aim was to preserve freshness, clean aromas and good drinkability. For this reason, the wine was left to rest on its fine lees for almost no time after fermentation.

The result is a fresher take on Pálava, with 26.1 g/l of residual sugar and 6.8 g/l of acidity. It is aromatic and pleasantly sweet, yet remains lively and juicy thanks to its acidity.
