What it pairs with

baked zander, baked trout, chicken with herbs, creamy vegetable risotto, pasta with a light creamy sauce, grilled vegetables and milder semi-hard cheeses.

We harvested the grapes for this Veltlín on 13 October, when their sugar content was 21.2 °NM. They were beautifully healthy and fragrant, so after processing we left them to macerate on the skins for eight hours. This time, we carried out fermentation at a higher temperature. We wanted to preserve the typical varietal aromas of Veltlín, whilst also giving it greater body and fullness. After fermentation, the wine was left to rest on its fine lees for six months, which naturally rounded out the flavour and added depth. The result is a dry Veltlín with beautiful, fresh aromas, fruity notes and a fuller flavour. The variety’s typical spiciness remains subtly in the background.
