„We harvested the grapes for this Merlot on 15 October, when the sugar content was 21 °NM. They fermented in a vinification tank at a higher temperature and, after pressing, the wine was initially aged in stainless steel. It spent the final stage of ageing in a large 3,500-litre oak cask, which gently rounded out its character. The fruit – cherries and sour cherries – remains the dominant feature, complemented by a light hint of chocolate. A Merlot in which fruity juiciness meets a delicate velvety texture.“
